...One of my faculty colleagues wants to get into podcasting, and I'm looking into solutions for not only him but anyone else in the department who may get bit by the bug.

Pros: we have our own server, plenty of space, bandwidth out the yin-yang. The instructor in question is quite skilled at audio manipulation and encoding.

Cons: He's not so skilled at manually editing an .xml RSS feed, and I'd like to automate/GUI-up that process as much as possible. Also, he's on a Mac, though I know others who'll want to take advantage of this are on PCs.

Advice? All signs point to Feedburner, or possibly Movable Type with its free plugin. Anybody been down this road before?

I use Feedburner. It's insanely easy to set up. I use Blogsome to do the journaling, since it automatically creates an XML feed from it, then point Feedburner to that, and it does any additional necessary formating.
